And if you haven't had potatoes roasted in duck fat, I'm sorry - you're letting one of life's greatest pleasures (or at least one of the top ones where you leave your pants on) pass you by! I would definitely roast them in bacon fat . Yummmm Doesn't really impart any 'duck' flavor, just enhances the flavor of the potato itself and makes them extra crispy.
