This is a luxury version that is super tasty and very fattening! For 4 servings: 100g pudding (short grain) rice 450ml whole milk 300ml double cream 227g clotted cream 75g golden caster or golden granulated sugar Vanilla extract to taste 25g unsalted butter - Heat milk and cream until the clotted cream is liquid - Mix in sugar and vanilla extract - Pour into an oven proof dish and add the rice - stir a little as the rice can stick together - Top with thin slices of butter - Bake on gas mark 3 for 1.5 - 2 hours, until the top is golden brown and bubbly. 972kcal per serving 84g fat per serving Enjoy! CherryPi Posted December 29, 2019 Author Share Posted December 29, 2019 No you don't pre-cook the rice. That's a shame for you guys, clotted cream is one of the most delicious things on the planet! And even higher in calories than double cream. If you want to try again, try this recipe - it's from Mary Berry and is foolproof. 60g pudding rice 300ml milk * 300ml double cream 30g caster sugar 15g butter (though I usually use a little more - up to about 25g) Vanilla or other flavouring to taste Leave rice soaking in the milk and cream for 30 minutes. Add sugar and vanilla and stir well. Place thin slices of butter on top. Bake for 2 - 2.5 hrs on your oven's lowest setting. * You can use a ratio of 2 parts cream to 1 part milk and it will come out fine, just thicker. I haven't tried with any more cream than that.
